Buttermilk Red Velvet Skillet Cookie
Perfect for an easy dessert, this one pan red velvet skillet cookie is best served warm with vanilla ice cream.

- StepPreheat oven to 350°F (180°C).
- StepBrush large (10-inch/25 cm) cast-iron skillet with 1 - 2 tbsp butter.
- StepIn medium bowl, whisk together flour, cocoa powder, baking soda and salt.
- StepIn large bowl, stir together remaining butter, brown sugar and granulated sugar until blended. Stir in egg, buttermilk, red food colouring and vanilla until blended.
- StepStir in flour mixture until combined. Stir in half the white chocolate chips. Spread batter into prepared skillet; sprinkle with remaining white chocolate chips.
- StepBake cookie skillet for 22 to 25 minutes or until edges are golden and tops are set (let stand for 10 minutes before serving).
- StepMeanwhile, in small skillet set over low heat, heat chocolate chips, buttermilk, vanilla and salt, stirring occasionally, for 2 to 3 minutes or until smooth and melted.
- StepServe warm cookie skillet with vanilla ice cream and buttermilk chocolate sauce.
